Sweet Potato Tater Tots - Yum!

This year, add something fun to the Thanksgiving menu that will please the kids and the kids in all of us.  Sweet potato tater tots are in-theme with the holiday and are delicious.  They can be prepared in advance and frozen, ready for the big day!

Total Time – 45 minutes    Servings - 8

Ingredients

24 small Sweet Potatoes or 8 large Sweet Potatoes.

1 cup Butter

1 cup All-Purpose Flour

3 cups Parmesan Cheese

2 ½ Tbsp Fresh Basil (about 32 chopped leaves)

1 tsp Ground Black Pepper

½ tsp Salt

½ tsp Cayenne Pepper

4 cups Milk

4 Eggs

 

Cooking Instructions

Step 1

Preheat oven to 400 degrees F (200 degrees C).

Step 2

Peel the Sweet Potatoes.

Step 3

Grate the sweet potato. Mince the Fresh Basil (1/2 Tbsp). Melt the Butter (1/2 cup).

Step 4

In a medium-sized bowl, take the grated sweet potato and thoroughly combine it with melted Butter (1/2 cup).

Step 5

In a separate bowl, combine the All-Purpose Flour (1 cup), Parmesan Cheese (3 cups), Minced Fresh Basil (2 Tbsp), Ground Black Pepper (1 tsp), Salt (1/2 tsp), and Cayenne Pepper (1/2 tsp) and whisk together.

Step 6

A couple of tablespoons at a time, pour the dry ingredients into the bowl with the sweet potato so they are evenly mixed.

Step 7

1 tablespoon at a time, shape the tater tots with your hands, and place on a baking sheet lined with parchment paper. Repeat until all the sweet potato mixture is used up.

Step 8

Put the Panko Breadcrumbs (4 cups) in a separate bowl. Prepare the egg wash by whisking together the Eggs (4) and the Milk (2 cups) in a small bowl.

Step 9

To coat the tots, dunk each tot first into the egg wash, then roll the coated tot in the Panko crumbs until covered, then place back onto the baking sheet.

Step 10

Bake the tots for 25-30 min until the tops are brown.

Step 11

Garnish with minced basil and a little parmesan cheese.
